Chamomile is member of the botanical family asteraceae (sunflower), also known as mayweed. We could found this flowering plant, both annual and perennial, prized for both its ornamental beauty and its essential oil. One of the most popular varieties is German Chamomile (matricaria recutita). Like others of its species, chamomile has thin divided leaves and daisylike flowers with large cone-shape centers.


The flowers are dried and brewed into a tea that is well-known to soothe nerves. The flowers are rich in oil, and once dried, are used to flavor jams, jellies, puddings, cookies, and cakes. In addition, the Spanish use it to flavor their famous dry sherry Manzanilla. Dried chamomile is widely available in tea shops and health food stores.

Onion is member of the botanical family liliaceae (lily, onion). There are many varieties of onion (allium), including leeks, shallots, chives, and garlic. They all share a similar structure, with hollow single stems growing out of bulbs and flowering into pom-pom flowers, and every part of the plant is edible.

The pearl onion (allium cepa), or walking onion or tree onion, is a peculiar form. The plant grows a mass of bulbs at the top of the stem, where a normal onion flower would appear.


Onions are used in infinite ways, but certain preparation methods bring out different characteristics. Cut onions release more of their harsh oils than onions cooked whole. If onions are to be eaten raw, you can tame the harsh oils by thoroughly soaking and rinsing in cold water. Roasting whole or chopped and sautéed over slow heat brings out an onion's natural sugars, which can be further cooked to caramelization.


In addition to fresh, onions are also commonly available in dried, flaked, powdered, or salted forms, all processed from dehydrated bulbs. Be aware that these dried forms have a more concentrated flavor. Onions are available wherever people like to eat.

The fruit itself looks like a fig as it buds and a funny round pear when it's ripe. The juicy pulp hides a pit surrounded by a red fleshy net, or mace. Beneath the mace is a pit with a hard exterior shell. And inside the shell is the nutmeg. The nutmeg is soft when first removed, but becomes rock hard when dried in the sun.


Mace is also dried in the sun, and the two are packaged and sold separately. Historically, nutmeg was used as a mild sedative, and it's a common belief that taking large quantities will produce a hallucinogenic effect. Nutmeg and mace share a similar flavor when ground. Mace is a bit stronger than the sweet, spicy nutmeg. Both are available whole and ground, but the flavor of the ground versions tends to dissipate rapidly. Special nutmeg graters are available for gadget-lovers, and they greatly extend the life of nuts. A grated nut will seal itself up after use, and very little of the flavorful oil will dissipate through the wound. Mace is equally long-lasting, although a bit more difficult to grind. I find that a mortar and some muscle work best for small amounts. Grind larger amounts of mace in a coffee grinder.


Nutmeg is commonly thought of as a sweet spice, but it's used in all sorts of savory recipes, too. French cuisine especially uses nutmeg in starch, grain, egg, and cheese dishes for just the right balance. Whole and ground nutmeg is widely available in markets across the globe.
